Review of Service
This class was fun and informative, with a lot of hands-on cooking time, but also a lot of background into the traditions behind certain types of Italian cuisine. My husband comes from a family with strong Italian influence and background, and mine had none. It was important to learn about Italian cooking, as well as Italian traditions. This class did not disappoint. I learned a lot of great tips and tricks for Italian cooking, as well as a lot of background on certain dishes, as well as practice in Tuscan cooking, with a lot of influence on soups instead of pastas, and oil instead of butter or lard. It utilizes a lot of the regions natural plants, herbs, and things that are easily accessible to the poor. The result was amazingly simple dishes with great flavor and creativity.
Tips
Learn a lot about the regions beforehand, otherwise it is easy to become overwhelmed with the different regions and native plants and types of cuisine served in those parts. Familiarize yourself with different methods of cooking before the class, also, as there is not a lot of remedial kitchen stuff that is gone over in the class.
